BREVARD COUNTY • ISLE OF MERRITT, FLORIDA – Fresh off its grand opening in December, Big Dog Kombucha is becoming a local hit among its customers receiving numerous 5-star reviews.

Located at 239 E. Merritt Island Causeway on Merritt Island, Big Dog Kombucha is new to the area after their grand opening on December 19, and Space Coast Daily has secured first-hand exclusivity in the Kombucha process.

Kombucha is an ancient probiotic drink made from a combination of fermented black and green tea and fresh fruit puree.

During the first fermentation process, a symbiotic culture of bacteria and yeast is infused with sweet tea. The microbial populations of the SCOBY (symbiotic culture of bacteria and yeast) sit on the sweet tea for about a week while the bacteria eat the sugar from the sweet tea.

WHAT IS KOMBUCHA?

Kombucha is a fermented tea drink. It is made by adding a symbiotic culture of bacteria and yeast (SCOBY) to a solution of tea and sugar. During the fermentation process, the cultures metabolize the components of sugar and tea to yield a naturally carbonated drink, with a slightly tart flavor, full of healthy components like B vitamins, organic acids, antioxidants and traces of alcohol.

Kombucha originated in northeast China (historically called Manchuria) around 220 BC. AD and was initially prized for its healing properties. Its name is said to be derived from Dr. Kombu, a Korean doctor who brought fermented tea to Japan as a remedy for Emperor Inkyo.

Eventually tea was brought to Europe following the expansion of trade routes in the early 20th century, appearing notably in Russia (as ‘Kambucha’) and Germany (as ‘Kombuchaschwamm’) .

The internet is full of anecdotal reports of people claiming better health attributed to Kombucha consumption, but people are lying so I can’t tell what’s true and what’s not. However, I can tell my own story.

I had tried Kombucha before, but it tasted like vinegar and I didn’t care. Shortly after my first experience, I bought hard kombucha instead of beer to take to a party and actually enjoyed it more than the beer.

In fact, they have now introduced a whole new botanical beer that has morphed into a whole new beverage category.

AMAZING TASTE

Our Kombucha gets its incredible taste and striking color directly from nature’s abundance. Fresh fruit and raw honey was what we used when we started this brewing journey in our kitchen and we found no reason to deviate from it.

UNPASTEURIZED HONEY

The pollen that makes our raw, unpasteurized honey is harvested by a local beekeeper’s worker bees from the wildflowers of the Space Coast. These are the same wildflowers that prompted Juan Ponce De Leon, whose first landing in 1513 was not far from where our brewery stands today, to call it “La Florida

FRESH FRUITS ONLY

We source our fruit from local suppliers and source local and organic produce whenever possible. The only exception to our strict “fresh fruit only” rule is orange juice in our Liquid Sunshine flavor. Oranges do not store well and the only way to source preservative-free orange juice is to use frozen concentrated orange juice. HOWEVER, we stay local and real – This process was developed in Florida in 1948 and nothing but orange juice is used to make it.
